Not your mother’s desserts

Going away to college is fun, exciting and full of new adventures. But suddenly it’s three weeks in and you’re piled up knees deep in homework, dirty dishes and clothes scattered all over the floor. The excitement of the dining hall food is fading away and you’re stuck in your dorm craving mom’s fresh baked desserts. What do you do?

Glad you asked! Mug recipes are great for college students because they are quick, easy and taste like mom’s famous desserts. All you need is your favorite mug, a microwave and a few simple ingredients from the store or dining hall. Here are five mug recipes you can make yourself.

1. Chocolate Chip Cookie

1 small egg

3 Tbsp. Brown Sugar

1/3 Cup Flour

1 Tbsp. Softened Butter

Mini Chocolate Chips

Mix all the ingredients into your mug, pop in the microwave for about 1.5 minutes and enjoy!

2. Chocolate Nutella cake

4 Tbsp. self-rising flour

4 Tbsp. white granulated sugar

1 egg

3 Tbsp. cocoa powder

3 Tbsp. Nutella

3 Tbsp. milk

3 Tbsp. olive or vegetable oil

Mix all the ingredients into your mug, pop in the microwave for about 1.5 minutes and enjoy!

3. Gluten Free Brownie

1/4 cup gluten-free oat flour, quinoa flour, or a gluten-free flour blend

1/4 cup packed brown sugar

2 Tbsp. unsweetened cocoa powder

Pinch salt

2 Tbsp. canola or other mild vegetable oil

2 Tbsp. milk, coffee or water

Mix together dry ingredients in the mug, then stir in the oil and milk until left with a thick paste like texture. Microwave on high for a minute. Add some vanilla ice cream on top for a perfect little dessert.

4. Cinnamon Roll Cake

2 Tbsp. applesauce

1 Tbsp. vegetable oil

1 Tbsp. buttermilk

1/4 tsp vanilla extract

1/4 cup + 1 Tbsp. all-purpose flour

2 1/2 Tbsp. packed light-brown sugar

3/4 tsp ground cinnamon

1 dash ground nutmeg (optional)

1/4 tsp baking powder

1/8 tsp (scant) salt

Cream Cheese Icing

1 Tbsp. Cream Cheese or Neufchatel Cheese, softened

2 Tbsp. Powdered sugar

1 tsp milk

Combine ingredients for the icing and set aside. Combine all other ingredients in a mug until smooth texture. Microwave for about 1 minute, served warn topped with Cream Cheese Icing.

5. S’more’s Mug Cake

2-3 Tbsp. graham cracker crumbs

3 1/2 Tbsp. unsalted butter, melted

2 Tbsp. granulated sugar

1 large egg

1/2 tsp. vanilla extract

1/4 cup all-purpose flour

2 tsps unsweetened cocoa powder (mine was dark cocoa, hence the dark color)

1/8 tsps baking powder

pinch of salt

1 1/2 oz. milk chocolate (chopped or morsels)

Marshmallows

Combine 3 tablespoons butter and 1 oz of chocolate in a small bowl, then melt in the microwave for 20-30 seconds. Set aside. In another bowl, combine remaining melted butter with 2-3 Tbsp. of graham cracker crumbs and stir until moistened. Press graham crumbs into the bottom of your mug.

In a bowl,whisk egg, sugar and vanilla. Add in flour, baking powder, salt and cocoa, stir until a thick batter forms. Stir in melted butter and chocolate. Stir remaining chocolate chips. Add half of the mixture on top of the graham crust, then throw in few marshmallows. Add remaining batter on top, then pop in the microwave for 1 minute and 20 seconds to almost 2 minutes. Remove and top with additional marshmallow if desired. You can pop it back in the microwave for 5-10 seconds to make them melty. Sprinkle with graham cracker crumbs.
